
Here are some of our recipes we served at our annual Holiday party. Tried and true, Enjoy!
Doris's Famous Bread Cups
20 slices white bread, crusts removed. Butter both sides and press into muffin tins and bake at 350F until golden brown (aprox 10 min)
Filling
1/2 cup butter
1 small onion, diced
1 cup fresh musrooms, diced
1 can Flakes of Turkey, drained
3 tsp flour
1/3 cup green pepper, diced
1 cup milk
1/4 tsp each salt & black pepper
1 tsp fresh lemon juice
Chopped parsley
Melt butter in saucepan and saute onions and mushrooms until tender, stir in turkey and sprinkle flour over mixture. Add milk and heat until reaches a boil and thickens. Remove from heat, stir in salt, pepper and lemon juice. Fill prepared cups and place on cookie sheets. Bake for 10min at 350F. Sprinkle with chopped parsley.
Spinach-Stuffed Mushrooms
1 pkg Stove Top Stuffing Mix for Chicken
1 1/2 cups boiling water
40 medium mushrooms (about 2 lbs) cleaned
2 tbsp butter
2 cloves garlic, minced
10 ox frozen spinach, thawed, drained and chopped
1 cup shredded part-skim Mozerella cheese
1 cup grated Parmesan cheese
Preheat oven to 400F. Mix stuffing with water and set aside. Remove stems from mushrooms; chop stems. Melt butter in large skillet on medium heat, add chopped stems and garlic; cook and stir until tender. Add to stuffing, spinach and cheeses; mix well.
Spoon evenly in mushrooms caps. Place, filled sides up in shallow baking pan and Bake 20 minutes or until mushrooms are tender and filling is heated through.
